Perfectly executed Yakitori with amazing side dishes as well. Chicken skin, Aomori Garlic, Fried Tofu, and Chicken Neck were highlights.

備屋　錦橋店（愛知県名古屋市）職人による焼鳥展示会の撤収の為に名古屋にやってきた。例の如く、展示会を企画している花形部署の面々が片付けもそこそこに帰ってしまった後、窓際業務にも脂がのってきたのか、運送会社の方々と地味に協力でき、搬出を早く終えることができた。中高年肉体作業のあとはやはり肉が恋しくなる。ということで焼鳥屋を訪ねた。懐かし過ぎるの映画のチラシが壁一面を覆っており、昭和にタイムスリップしたかのよう。厚揚げ一際目立つように品書きが貼られている。是非とも味わって欲しいのかもしれない。外はカリッと中はトロッとしており、豆腐の味が濃い。みずみずしいネギがたっぷりと盛られている。続く焼鳥に期待が膨らむ。焼き場の正面に座ったので、調理の様子がよく見える。注文を受けてから串打ちしたあと、部位毎に焼き方を丹念に分けてくれているみたいだ。タイミングを見て、数回に分けて塩胡椒してくれている。これも部位で変えてくれているかもしれない。砂肝こんなにジューシーなものだったのか。今までのがパサパサに思えて仕方がない。レバー焼いてくれているのだが、新鮮過ぎて一口噛むとレア感で包まれる。2本串で支えてくれているのは型崩れを防ぐためかな。モモ肉の甘みを最大限に出しつつ香ばしさもある。見事な焼き加減。思わずおかわりしてしまった。振る時の手の形が絶妙な塩梅につながっているのだろう。星の数程ある焼鳥屋の中には、やたらにしょっぱい店が散見しているが、肉本来の味を第一に考えた控えめな味だ。掃除はされているようだが、店内は雑然としている。女性だけで入るのには抵抗があるかもしれない。超一流の窓際リーマン＋ぼっち夫としては、素敵な女性たちも楽しんでいる中で、美味しいものを満喫したい。昭和感は残しつつも、誰でも入りやすい雰囲気を取り入れれば最高の一店になれると思う。

A yakitori joint with a twist—the visuals are low-key, but the flavors? Next level. The liver was so good it stopped me mid-sentence. Going omakase was a great call—skewers just kept arriving, and we didn’t even have to think. Perfect for a night of nonstop chatting.

Went with my wife and 2 year old. Great hospitality from the boss. Friendly and accommodating. No English menu but they did their very best to communicate with us. Wonderful tasty food. The best grilled liver, heart, shishamo, tebasaki we've had. Homemade tofu is great as well, as well as the mentai ochazuke. Not many options admittedly for a 2 year old but they were very accommodating to make an extra noodle udon dish for us. Thr friendliness of the other customers on the day added to the really positive experience. Do note no baby chair and only cash in yen. No smoking is allowed which is good. Overall a wonderful experience and hope this english review will help more non Japanese customers find their way there. Will be back!
